I really enjoy the dinners I make for myself (taken with a ubiquitous poor quality camera phone of course).
-Roasted chicken legs marinated in olive oil, lemon juice, rosemary, and oregano.
-Spiced Brown rice (I use about 12 herbs and spices in this rice…)
-Roasted Brussel sprouts, carrots, baby portobello mushrooms, and poblano peppers with thyme, rosemary, and black pepper.
-Garden grown tomato from Wisconsin (my last one!)
Not pictured: mint tea and a big glass of ice water.
